Every now and then, I like to indulge in a sweet treat. My go to is always something chocolate, and especially with the frigid temps we’ve had on the East Coast this Winter, hot cocoa has been on my mind…and in my cup.
The definition of indulgence is very different to me now than what it used to be. I have always had a sweet tooth and I think by now, at the age of 33, that’s probably not going to change. What has changed over time is what I qualify as satisfyingly sweet vs. sickeningly sweet. In my younger years, I loved milk chocolate and hated dark chocolate. Now it’s the complete opposite – I even enjoy eating some 100% dark chocolate bars! So when I want something sweet, I’m usually looking for the following qualifications:
So here is what I came up with for a really satisfying hot chocolate that also meets every single one of the above qualifications!

1 heaping tbsp unsweetened cocoa powder (I love NuNaturals’)

10oz. Unsweetened Vanilla Almond Milk
2 tbsp SO Delicious Coconut Creamer or full fat canned coconut milk

This is an easy one! Put everything in a blender and blend! Pour into a really large mug and heat in the microwave for 1:30. Keep an eye on it as the collagen froth will expand as it heats. You don’t want this to overflow or you’ll have a mess to clean up! I recommend doing it this way because it’s also not a good idea to put really hot liquids in a blender…..it just breaks the seal and then you’ll have hot cocoa in all the crevices of your blender. NO Bueno!
Finally, add your favorite toppings and enjoy! Or, skip the toppings for an even lower sugar treat!
