I came up with these Protein Energy Bites with two people in mind:

  1. Athletes who need a little burst of energy pre-workout but don’t want to eat a whole meal and need something more convenient
  2. The sugar craver who “needs” dessert or something sweet after a meal. Pop one of these in your mouth and your craving will be cured with nutrient dense ingredients!

Why did I use collagen instead of some other protein powder?

  1. Collagen contains about 7-10g of protein/tbsp
  2. Our hair, skin, and nails are made up of mostly collagen….so consuming it will keep these components strong and healthy
  3. It’s pretty easy to digest and also dissolves very easily in liquids. I put a scoop in my coffee every morning!
  4. It’s flavorless and odorless. Perfect for someone trying to reduce sugar or sugar alternatives in a protein powder.
  5. May help boost the gut integrity by strengthening the gut lining and closing up those leaky gap junctions that many of us have. Leaky Gut (IBS, gas, bloating, IBD) anyone?

Below are some seasonal Fall flavors that I hope you will enjoy and share with your friends! They’re perfect for a CrossFit competition or a Football Tailgate Party!

*Rolling Tip: These guys are sticky, so if you’re finding that half the mixture is left stuck to your hands, just wet your hands a bit every 10 bites or so to keep the balls rollin’ ( literally).

 

Pumpkin Pie 

Ingredients:

1 C Dates, soaked

2 C Raw Pecans, crushed

1 C Coconut Flakes, shredded

1/2 C Pumpkin Puree (unsweetened)

1/4 C Chia Seeds (Optional)

1 heaping tsp pumpkin pie spice

Directions:

Step 1: Soak dates in a bowl of warm/hot water for 45 minutes or until soft. Then strain out water and toss or save for a liquid sweetener in the fridge.

Step 2: Puree the softened dates in a food processor until smooth or almost smooth. Remove the date puree and save in a medium size mixing bowl.

Step 3: Pulse the nuts in the food processor until medium-finely ground. You don’t want huge chunks, but you don’t want it to turn to flour either.

Step 4: Mix date puree and chopped nuts together, along with canned pumpkin.

Step 5: Mix in remaining ingredients until well mixed and then roll into small bite-sized balls.

You will need to store these in the fridge so they don’t get warm and mushy, so I would recommend stacking them lightly (don’t pack ’em in) in a large Tupperware or glass container.

 

Chai Spice

Ingredients:

1/2 C Dates, soaked

1 C Raw Pecans, crushed

1 C Almonds, crushed

1/2 C Coconut Flakes, shredded

1 drop doTERRA Ginger Essential Oil

1 drop doTERRA Cardamom Essential Oil

1 drop doTERRA Clove Essential Oil

1 tbsp Pure Maple Syrup

Directions:

Step 5: Measure out Maple Syrup, then add 1 drop of each essential oil to the tbsp of syrup and pour the whole thing onto the nut/date mixture. **Note that you can use dried spices in place of essential oils, but the EOs will provide a larger punch of flavor. I highly recommend purchasing doTERRA brand, as they are tested to be 100% pure and unadulterated which makes cooking/baking with them safer than many other EO companies. 

Step 6: Mix it all up and then roll into small bite-sized balls.

You will need to store these in the fridge so they don’t get warm and mushy, so I would recommend stacking them lightly (don’t pack ’em in) in a large Tupperware or glass container.

 

Sea Salt Mocha

Ingredients:

1 C Dates, soaked

2 C Raw Almonds, crushed

1 C Coconut Flakes, shredded

1/4 C Unsweetened Cocoa Powder

1 tbsp + 1 tsp Instant Espresso Powder

1/2 tsp Sea Salt

2 tbsp Unsweetened Almond, Cashew, or Coconut Milk

1/2 C Blanched Almond Flour
