Keto/Carnivore Crispy Chicken

I also like to refer to this recipe as Bronson’s Bomb-Ass Chicken, since my husband Bronson created it, and it’s pretty bomb. I decided after he made it a few times, that I will never attempt to make it because he does it so perfectly every time that I don’t even want to try. Plus, he also loves it so – motivation for him to make it every week himself! Win-Win for both of us!

This crispy on the outside, juicy on the inside chicken recipe will allow you to have chicken tenders, chicken parm, crispy chicken sandwich, or any other breaded chicken recipe you can think of, without missing the bread!

Run, don’t walk to your nearest Whole Foods, Sprouts, MOMs, or other natural grocer that sells high quality pork rinds so you can make this chicken ASAP!


Cooking fat of choice (Coconut Oil, Avocado Oil, Bacon Fat, Butter, Lard)

1 Egg, beaten in a bowl

(4) 6oz. Chicken Breast

1 bag of Pork Rinds

1 tsp Himalayan Pink Sea Salt (more or less to taste)

1 tsp Freshly Ground Black Pepper (more or less to taste)

1.) Heat a large pan (preferably cast iron if you have one) on the stovetop at a low-med heat. On our stove we use a 3. Add 1 tbsp of cooking fat.

2.) Tear a small opening in the bag of pork rinds to let all the air out, and then fold over to temporarily seal the bag again. Using a mallett or your fist, crush the entire bag of pork rinds into pork rind dust. Seriously, you want it to be really fine. You could also put in a food processor or blender but this way is less to clean up.

3.) Pour salt, pepper, and pork rind dust into a bowl or edged dish large enough to fit 1 chicken breast.

4.) Dunk raw chicken breast in egg to cover, then dredge in pork rind dust and put in hot pan.

5.) Cook over low-medium heat for 5 minutes/side, then cover and cook another 5 minutes or until the thickest part is no longer pink.

6.) The best part about this is the crispy outside, so if your pork rinds are not crispy at this point, take the lid off  and turn the heat up to medium and cook for 1-2 more minutes on each side. This should crisp up the outside.
