Choco-nut Oatmeal Protein Bars

This recipe makes a SUPER easy grab n’ go snack. It is great for pre or post workout, or really any time of the day you need a little pick me up!

Ingredients:

3 C dry oats (quick cooking or rolled)

1 C nut butter (Wild Friend’s Chocolate Peanut Butter is the bomb!)

¾ C water

2 scoops Chocolate Protein powder (lately I’ve been digging Ancient Nutrition’s Chocolate Bone Broth Protein!) 

2 scoops Further Food Collagen

4 Tbsp coconut flakes

2 Tbsp Chia Seeds

Directions:

In a large mixing bowl, combine oats, protein powder, 2 Tbsp coconut flakes, and chia seeds. Mix in nut butter until you get a clumpy consistency then slowly add in water until thoroughly mixed. Spread mixture in a 9×9 baking dish and sprinkle remaining 2 Tbsp coconut flakes over top. Cover with saran wrap and place in fridge until firm. Cut into squares and keep refrigerated or in freezer.
